THIS TASTES LIKE SUMMER. We have this on repeat every year once it warms up (ok we live in California, it is dreamy always haha) BUT come June… this salad occurs weekly.
Watermelon Feta Salad
Half of a large seedless watermelon
Handful of fresh basil
1 cup crumbled feta (or more to preference)
1 shallot, thinly sliced
1 lime
Olive oil
Balsamic vinegar
Salt
Chop watermelon into large cubes & place in a bowl. Sprinkle on basil, feta and shallot. Juice the lime over the top then drizzle with balsamic & olive oil. Top with a dash of salt. Best served cold!
