Meatloaf is total comfort food & I truly believe it can be done in a healthy way! Made with turkey & packed with veggies, this is a guilt free version of the good stuff. Serve with salad, rice or mash.
Veggie Packed Turkey Meatloaf
3/4 cup chopped red pepper
3/4 cup chopped carrots
1 chopped shallot
2 tbsp live oil
1.25 lbs ground turkey (20 oz)
1/2 cup panko
1/2 cup milk
1 egg
1 tbsp Worcestershire sauce
1 tbsp minced garlic
1 tbsp chopped fresh parsley
1 tsp salt & pepper
Sauce
1/2 cup ketchup
1 tsp mustard
1 tbsp Worcestershire sauce
1 tbsp brown sugar
Preheat oven to 350. In a skillet cook the veggies in oil & season with salt & pepper. Cook until tender then add a bowl with the remaining meatloaf ingredients. Spray a sheet pan and form into a loaf form on the pan. In a bowl whisk together ketchup, mustard, Worcestershire & brown sugar. Pour over meatloaf and bake for 1 hour.
