Sweet Potato Salad

When I lived in Australia, there was a chicken shop I would go to that had a sweet potato potato salad. It was the first time I had seen a potato salad made with sweet potatoes. I had to recreate this! It is so tasty & I love the flavor the sweet potatoes bring to the dish. It is a great summer side or something to bring to a potluck. Enjoy!

Sweet Potato Potato Salad

4 sweet potatoes, peeled

1 cup mayo (sub for vegan mayo if you wish!)

2 tbsp chopped green onion

3 tbsp white vinegar

1 tsp salt

1 tsp chives (dried or fresh)

1/2 tsp dill (dried or fresh)

1/2 tsp garlic powder

Peel & chop up your sweet potatoes into chunks. Put into a pot and cover will cool water & salt. Bring to a boil & cook until just tender. Roughly 15-20 minutes. While potatoes are cooking, make the sauce. Mix mayo, green onion, vinegar, salt, chives, dill and garlic powder together. Drain potatoes and put into a bowl, while hot, pour sauce onto them. Mix & set in fridge to cool completely. Serve with additional chopped green onions on top if you desire! It isn’t the greatest looking dish haha, but it sure is tasty!
