These lemon muffins taste like my childhood! This recipe was passed down from my mom & I added the strawberry twist. The crumble adds texture & an extra sugary topping.

Strawberry Lemon Crumble Muffins
Makes 12 large muffins or 24 small
1 cup melted butter
1 cup sour cream
4 eggs
Juice of half a lemon
2 cups sugar
3 cups flour
1/2 tsp baking soda
1/2 tsp salt
1 cup strawberries, finely chopped (gently coated in flour)
Topping
1/2 cup sugar
1/2 cup flour
4 tbsp softened butter

Preheat oven to 350 & grease or line muffin tin. In a stand mixer (or whisk by hand), mix melted butter, sour cream, eggs & lemon juice until combined. In a separate bowl mix the flour, sugar, baking soda & salt. Add dry to wet and gently fold together. Add in coated strawberries to the mix and fold in. Scoop into muffin tins and top with crumble topping. Bake 18-20 mins for regular muffin tin or 25 for large.
