I have been making this salad since early college student days because it was cheap, easy & lasted a week for lunch haha! It is just as good now as a 30 year old, busy mama. My family LOVE it, it is filling, budget friendly & serves a crowd. This can be made it 10 minutes & keeps in fridge very well.

Simple Balsamic Cous Cous Salad
1 box cous cous
1 red pepper
1 orange pepper
1/2 cucumber
1 block feta
1/2 bottle balsamic dressing (I love the target brand organic one)
Follow package instructions to make your cous cous. While that is cooking, chop your veggies & feta into bite size cubes. Pour warm cous cous over the veggies once complete & about half the bottle of sauce. Toss together until well coated & put in fridge until completely cooled. Top with more dressing if desired when serving. Eat as a main, with a protein or a simple side dish! Enjoy!
