Sheet Pan Chicken Fajitas

These chicken fajitas are so tasty & so easy. As a toddler mom, you may have noticed that most of my recipes are super easy. This is because Lord knows I ain’t got time for super intricate meals in this season of life. The fact that this is a one pan dinner is life changing & the fact that they have such complex flavors with such short cook time is mind blowing. It all begins with the homemade spice blend. Don’t be intimidated by this as I am sure you have most of these in your spice cabinet!

Sheet Pan Chicken Fajitas

2 tsp cornstarch

3 tsp chili powder

1 tsp onion powder

1 tsp cumin

1/2 tsp cayenne powder

1 tsp sugar

1 tsp salt

2 red peppers

1 red onion

2 chicken breasts

Olive oil

Juice of 1 lime

Preheat oven to 400. Make spice rub by mixing cornstarch, chili powder, onion powder, cumin, cayenne, sugar & salt together and set aside. Chop peppers, onion & chicken into strips. On a sheet pan put peppers, onion, chicken & cover in seasoning. Pour olive oil over & mix until all is covered. Bake at 400 for 20 minutes then turn oven onto broil & broil for 5-10 until charred to your liking. Squeeze lime juice over the fajitas when they come out of oven.

Serve with tortillas, greek yoghurt (or sour cream), cheese, avocado or my go to guac. These can also be served in a bowl instead of tortillas if you prefer! They also make great leftovers!
