We recently moved to Nashville & experiencing seasons has been so lovely. It makes me want to make all the cozy foods, especially soup! This sausage, kale & potato soup is SO easy & SO delicious. Feel free to adapt it to turkey sausage or sub in spinach for the kale. My husband doesn’t love potatoes so for others like him, a pasta or gnocchi would go great as well!
Sausage, Kale & Potato Soup
1 lb sausage
1/2 onion
4 cups chicken broth
1 cup half and half
3-4 cubed yukon gold potatoes
2 tbsp fresh thyme
Salt & pepper
Red pepper flakes
1-2 cups chopped kale
1 cup fresh parm
Juice of half a lemon
In a soup pot or dutch oven begin to cook your sausage until starting to brown. Add in the onion & cook in with the sausage (I don’t use any oil as the sausage has enough fat). Once browned, add in 4 cups of chicken broth, the half & half and potatoes. Bring to a low simmer & season with salt, pepper, thyme & red pepper flakes. When potatoes are tender, add in kale, fresh parm & lemon juice.
