Rosemary Smashed Potatoes

So technically smashed potatoes are supposed to be made with tiny potatoes that you smash whole. BUT. It is possible like this & I actually love using sweet potatoes for smashed potatoes. The rosemary gives them all that comfort food feels.

Rosemary Smashed Potatoes

2 sweet potatoes

4 Yukon gold potatoes

Salt for water

Olive oil

1 tbsp chopped rosemary

1 tbsp salt 

Chop your potatoes into large chunks. Boil them until soft & preheat your oven to 400. Cover your sheet pan in a large guzzle of olive oil. Place potatoes onto sheet pan and use the back of a spatula to smash down. Season them with salt, pepper & rosemary. Drizzle with more olive oil and bake for 40 minutes, flipping halfway through.
