Banana muffins are iconic for a reason. There is something so classic & comforting about them. I made jumbo ones because… why not… but these are definitely just as great in the standard muffin tin as well.
Perfect Banana Muffins
Makes 8 large muffins or 12 standard sized muffins
1 stick butter, melted
1 cup brown sugar
3 eggs
2 tsp vanilla extract
4 ripe bananas
2 cups flour
2 tsp baking soda
1/2 tsp salt
Topping (optional)
6 tsp brown sugar
2 tsp flour
Preheat oven to 350. In a stand mixer, beat the butter, brown sugar, eggs and vanilla together. Add in the bananas (I add them in whole) until all combined. Add in the flour, baking soda & salt until just combined. Scoop into lined muffin tins 3/4 of the way to top. If making the topping, combine sugar & flour and pour onto top of muffin batter. Bake large muffins for 25-30 mins and standard size for 20 mins.
