Chicken schnitzel or any form of crispy chicken is one of my favs. This recipe is SO easy, SO quick & SO delicious. You can serve it with literally anything!! Salad, roasted veggies, rice, pasta or on a sandwich, you cannot go wrong.
Panko Parmesan Chicken
2 x chicken breasts
1/2 cup panko
1/2 cup parmesan cheese
1 tsp dried parsley
1 tsp salt
2 eggs
Oil for pan fry
Lemon, for serving
Slice your chicken breasts in half length wise & pound them thin. Mix panko, parmesan, parsley & salt together in a shallow dish. In a separate dish whisk the eggs together. Dip the cutlets into the egg & then the panko mix and repeat until all cutlets are coated. In a skillet, heat oil to cover the bottom of the pan. When hot, add in chicken & cook until browned and crispy on each side. As soon as you remove chicken from oil, place on a paper towel lined plate to catch additional grease. Season with salt while still warm. Serve with lemon slices & enjoy!
