Paleo Coconut Cashew Granola

I love keeping a stash of this granola in our fridge! I have it for breakfast most mornings with yoghurt & berries or some milk. It also makes a quick and filling snack throughout the day. These clean ingredients are likely in your pantry & whip together super easily.


Paleo Coconut Cashew Granola

3/4 cup unsweetened shredded coconut

3/4 cup cashews

1/2 cup pecans

1/2 cup walnuts

1/4 cup hemp hearts

1/4 cup maple syrup

1 tbsp vanilla

1 tsp pink salt

Preheat oven to 375. Chop the nuts up & add into a bowl with all the other ingredients. Mix together & pour onto a sheet pan lined with parchment. Bake for 15-20 minutes until toasted. Scoop into a container and store in fridge for up to 2 weeks.
