Italian Chopped Salad

This salad is not your normal salad. It is pretty much a charcuterie board in the form of a salad haha. It is filling, tasty & channels all the best Italian flavors in one bowl. This is another husband approved salad!

Italian Chopped Salad

1 can chickpeas

1/2 bunch asparagus, chopped

1 Tbsp olive oil

2 cups chopped kale

1 small container of marinated mini mozzarella (I love the ones from Trader Joe’s)

1 package salami

1/2 red onion, chopped,

1 roasted red pepper, chopped,

1/2 cup pine nuts

2 tbsp Italian dressing

Leftover oil from marinated mozzarella

Preheat oven to 400 and place drained chickpeas and asparagus on baking sheet. Season with oil, salt & pepper and bake for 15 minutes. Meanwhile, chop kale & massage with 2 tbsp of Italian dressing. Chop up salami, cheese, onion & red pepper. Once chickpea/asparagus mix is done, add all ingredients into a bowl & dress with the oil left from marinated mozzarella. Enjoy!
