When I was pregnant with my son I craved sandwiches ALL THE TIME. Of course you crave something when you can’t have deli meat. Therefore, I created this chicken salad recipe to satisfy the sandwich cravings. Over the years it has evolved and we now love serving it on lettuce wraps. You can totally still serve this on bread or in a wrap & it will be SO GOOD! This gets better the longer it chills. So best to make it in advance & keep in fridge until you are ready to eat.
Herby Chicken Salad Lettuce Wraps
2 cups shredded chicken
3/4 cup mayo
Half a lemon, juiced
1 tsp salt
1/2 tsp garlic powder
1 tsp dried or fresh dill
1 tsp dried or fresh chives
2 tsp parmesan cheese
1 head romaine
Separate the romaine leaves & rinse off. Mix all ingredients together & chill in fridge for at least 30 minutes before serving. Scoop into lettuce & serve!
