Easy Cheddar Chive Biscuits

2 cups flour

2 tsp baking powder

1 tsp baking soda

2 tsp sugar

1/2 tsp garlic powder

1/2 tsp salt

1 cup buttermilk (or 1 cup milk + 1 tbsp vinegar or lemon juice)

1.5 cups shredded cheddar cheese

3 tsp chopped chives

3/4 cup butter (separated)

Preheat oven to 425. Take out cold butter & dice up 1/2 cup butter into cubes. In a large bowl add in flour, baking powder, baking soda, sugar, salt & garlic powder. Add in cold butter cubes and use a pastry cutter (or 2 knives) to cut the butter into the flour mix. Cut the butter until pea sized pieces are mixed in. Add in buttermilk, cheese & chives. Separate dough into 2 portions & press into rectangles. Take additional 1/4 cup butter and press it down with a rolling pin (or bottle of wine!) and set on top of one piece of dough (see image below). Top with second piece of dough, then fold in half, then half again. Press dough out with your hands into a rectangle & cut into 6 pieces. Set into a parchment lined pan & bake for 20 minutes.
