These muffins are DIVINE. The pairing of chocolate & raspberry is super decadent and the muffin base is fluffy & delicious.
Dark Chocolate Raspberry Muffins
Makes 12 large muffins or 24 small
1 cup softened butter
1/3 cup oil
1 cup greek yoghurt
4 eggs
2 cups sugar
3 cups flour
1/2 tsp baking soda
1/2 tsp salt
1 cup raspberries
1 cup dark chocolate chips
Preheat oven to 350 & grease or line muffin tin. In a stand mixer (or whisk by hand), mix melted butter, oil. greek yoghurt and eggs until combined. In a separate bowl mix the flour, sugar, baking soda & salt. Add dry to wet and gently fold together. Fold in raspberries & dark chocolate. Scoop into muffin tins and bake 18-20 mins for regular sized muffin tin or 25 for large.
