Coconut Lime Rice

This rice is SO GOOD. It is perfect paired with curries, stir fry’s, salsa verde chicken, etc. I like to make a big batch & use for a few recipes all week long.

Coconut Lime Rice

2 cups rice

2 cans coconut milk

2 limes juiced

1 tsp salt

1 tsp sugar

Mix rice & coconut milk in a sauce pan. Bring to a boil, cover & reduce heat to low. Simmer for 16 minutes then remove from heat & fluff rice. Add in lime juice, salt, & sugar. Mix together & serve!
