Classic Marinara

Classic Marinara

M

arinara is a very hit or miss thing for me. Most store bought marinara’s just aren’t good enough ha. Especially when it is SO easy to make something this tasty. This makes a big batch so I usually freeze half. This marinara is perfect with pasta & on chicken parmigiana. I love adding some heavy cream to the sauce with pasta to make a pink sauce.

Classic Marinara

8-10 garlic cloves (depending how garlicky you like your sauce! I like it garlicky!), minced

1 yellow onion, finely chopped

1/2 cup olive oil

2 cans tomato paste

4 tins tomato sauce (sauce, not crushed tomatoes)

1/2 cup red wine

1 cup water

1 tbsp dried basil

2 tsp sugar

Dash of red pepper flakes (optional)

Salt & pepper (this needs lots of salt!)

In a large pot add your olive oil, yellow onion & garlic, sauté until tender & season well with salt. Add in tomato paste and cook down until it turns into a brick red color. Add in tomato sauce, red wine, water, basil, sugar, red pepper flakes & salt and pepper. Bring to a boil then reduce heat to medium low & cover for about 45 minutes. Don’t rush it! The flavor comes from the cooking time. It needs it! Stir occasionally & then serve!
