Ok so maybe I am the only crazy person who still has a ginormous bag of Halloween candy in a bag in my pantry closet… I let my toddler have a few pieces then tucked it away for a “one day when we potty train” moment, then forgot about it. I found that bad boy this week and there were TONS of butterfingers in there. I chopped them up & boom, butterfinger cookies. Regardless of if you have a stash of Halloween candy lying around, you can grab some butterfingers (or sub in any other candy bar of choice) & make these wickedly delicious cookies.
BUTTERFINGER COOKIES:
Makes 2 dozen cookies
1/2 cup butter, softened
3/4 cup sugar
2/3 cup packed brown sugar
2 eggs
1 cup peanut butter
2 teaspoons vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1.5 cups chopped Butterfinger candy bars
Preheat oven to 350. In a stand mixer, mix butter and sugars until combined. Add in eggs, peanut butter & vanilla. In a separate bowl mix flour, baking soda & salt. Add dry ingredients to wet in stand mixer and mix until just combined. Add crushed butterfinger pieces and fold into batter.
Scoop onto baking sheets lined with parchment and bake for 12 minutes at 350. Immediately when taking cookies out of oven, smack the tray on your counter for a few good whacks. This allows air to release, making the cookies extra chewy.
