Huge fan of shrimp & in taco form it is even better. These blackened shrimp tacos are incredible & the cilantro chive yoghurt slaw freshens the whole thing up.
Blackened Shrimp Tacos w/ Cilantro Chive Yoghurt Slaw
1 bag frozen or fresh peeled and deveined shrimp (30-40 pieces)
Blackening seasoning (I used Kinders Cali’s Blackened Rub)
Olive oil
1 cup Greek yoghurt
Juice of 2 limes
2 tbsp chopped chives
2 tbsp chopped cilantro
1 tsp salt
1 bag finely sliced green cabbage
Tortillas
Avocados
In a bowl add the cabbage, greek yoghurt, chives, cilantro, lime juice & salt. Combine together and set aside while you cook the shrimp. In a skillet, add the olive oil & shrimp. Cover the shrimp in your favorite blackening seasoning & cook through. Once cooked, remove from heat and pull the tails off. Build your tacos with the shrimp, slaw & top with avocado (& sriracha if you want it extra spicy)!
