These baked cauliflower bites are so crispy & this bang bang sauce takes it over the top in deliciousness! I love these because they are a lighter, vegetarian version of the typical fried bang bang shrimp. Even my toddler loved snacking on this baked cauliflower before I put the sauce on!

Baked Bang Bang Cauliflower
Bang Bang Sauce
1 cup mayo
4 tbsp sweet chili sauce
1 tbsp honey
1 tbsp sriracha
1 lime juiced
1/2 tsp garlic powder
Salt & pepper to taste
Cauliflower
1 head cauliflower, broken into florets
2 eggs + splash of water
1 cup panko breadcrumbs
1/2 tsp garlic powder
Salt & pepper
Green onion to serve
Start by whisking together all sauce ingredients and set in fridge to chill. Preheat oven to 400 degrees. Whisk 2 eggs + splash of water in a shallow dish. In a separate bowl add panko & season the breadcrumbs. Dip cauliflower florets in the egg and then in the panko, place on prepared baking sheet. Once all of the cauliflower has been dredged, bake for 40-60 minutes until browned (flipping halfway through). Serve with the sauce & green onions.
